PĹŻvodně jsem nechtěl reagovat z několika dĹŻvodĹŻ, 1) dotaz by měl bfdt v Äe1sti buď o destilaci, nebo 2) na vĹĄeobecne9 diskusi (tedmto se DESLIKovi omlouve1m, Ĺže pokračuji na nevhodnodne9m medstě, třeba to přehoded tam kam to patřed).NeĹž destilujeme kvas, tak si napřed vybereme zpĹŻsob destilace. To mĹŻĹže bfdt     a) dvojstupňove1 jednoduche1 destilace, v prvned destilaci (1D) postupně oddestilujete lutr aĹž do cca 10% alkoholu (v pe1lence co odte9ke1 z chladiče), fakap ani dokap se zde vĹŻbec neodděluje. De1ve1 se jen pozor, aby se ne1m nepřipe1lil kvas a tedm abychom si  neponičili  lutr. Po fapravě lutru na 22   30% alkoholu, se ve druhe9 destilaci (2D), odděluje fakap (to je vĹĄe co překape do cca 76 C). Potom se jedme1 je1dro, srdce, prokap   a to aĹž do cca 91-92 C (ale mĹŻĹže to bfdt někdy i dředve, ze1leĹžed na kvalitě předchozedho kvasu !!). Od te9to teploty se jedmajed jednotlive9 frakce po cca 2 dc do samostatnfdch sklenic (očedslovanfdch postupně tak jak jdou za sebou),aĹž do teploty cca 95 C (opět ze1leĹžed na předchozedm kvasu, kdy se objeved  kyselka ) . Později se1m rozhodnete  okem , čichem, ochutne1nedm   ktere9 sklenice lze jeĹĄtě vre1tit zpět do je1dra, nebo je vyloučedte) . KdyĹž začne te9ci  kyselka  nebo jiĹž předmo dokap, větĹĄinou se jiĹž tato če1st nejedme1 !!!DalĹĄed zpĹŻsob  zpracove1ned  kvasu je jednokotlovfdm  rektifikačnedm  zpĹŻsobem. Zde se jiĹž fakap odděluje (samozřejmě musedte de1t zaředzened čas aby se ustanovila tzv. rovnove1ha, tj.  reflux  teče zpět do  kolony  minime1lně po dobu pĹŻl hodiny a nic z  destilačned hlavy  neodebedre1me. !!!). dakap oddělujeme opět do teploty kolem 76 C (ale mĹŻĹže bfdt i vyĹĄĹĄed, protoĹže by měl bfdt odche1zejedced alkohol podstatně silnějĹĄed, něž při jednoduche9 destilaci). Co se tfdče je1dra, plated pro něj stejne1 pravidla jako v předeĹĄle9m předpadě ! A tote9Ĺž u dokapu (zde ty teploty mohou bfdt podstatně  ostřejĹĄed  neĹž u jednoduche9 destilace !!!). Zhodnocened co patřed do je1dra a co do dokapu, je nejlepĹĄed nechat aĹž na druhfd den, kdy me1te jiĹž  Äistou  hlavu a tedm i  ostřejĹĄed  smysly.Třeted zpĹŻsob, sice me1lo u ne1s v praxi pouĹžedvanfd je ten, Ĺže jednoduchou destilaced odděledme z kvasu tuhe9 če1sti, tj. oddestilujeme lutr (faplně stejně jako v při prvnedm zpĹŻsobu 1D. Opět de1ve1me pozor jen na připe1lened kvasu a tak topedme jen přiměřeně !!. Druhou destilaci (rektifikaci) provedeme na předstroji s rektifikačned zesilovaced kolonou (po naředěned lutru na 22-30% alkoholu). Postupuje se opět jako v předeĹĄle9m předpadě.Na ze1věr bych chtěl podotknout, Ĺže kaĹžde1 aparatura me1 trochu odliĹĄne9 vlastnosti a ten, kdo na ni  pracuje , si ji mused  oĹĄahat  a to povětĹĄinou za jednu nebo dvě destilace nestihnete. Chce to čas, pedli a chuĹĽ pozorovat děj destilace tak jak probedhe1, jednotlive9 fadaje si zapsat a později vyhodnotit, co bylo  dobre9 , co je potřeba napředĹĄtě zlepĹĄit, nebo poopravit.  Taky je vhodne9, neĹž se takzvaně vrhneme do  vedru ve1ĹĄned prakticke9ho pe1lened , si o tom poře1dně něco prostudovat ! Zde na DESLIKu  je to docela dobře popse1no, takĹže se jeĹĄtě jednou omlouve1m, Ĺže jsem tedmto předspěvkem tak trochu  zanesl dředved do lesa .KdyĹž se vre1tedm zpět k vaĹĄemu dotazu,   ve druhe9 destilaci (lutru) budete medt asi fakapu jiĹž minime1lně, pakliĹže jste ho odebral jiĹž při prvned destilaci. Konec fakapu musedte odhadnout podle teploty odche1zejedcedch par do destilačned hlavy.Zdravedm Ljz.
